Regulatory Retail Standardization
2026 CDPH Pre-Standardization Trainings
The California Department of Public Health Food and Drug Branch (CDPH) will hold in-person Pre-Standardization Training for State Standard Candidates and Registered Environmental Health Specialists (REHS) who work as retail food inspectors in local programs.
Each training lasts three days and includes interactive presentations and classroom activities on topics like:
- Hazard Analysis Critical Control Point (HACCP)
- Foodborne Illness Risk Factors
- Active Managerial Control
- And other food safety subjects
How to Register
Use the QR code or link provided below to
pre-register. State Standard Candidates will get priority. Candidates
must attend one Pre-Standardization Training before scheduling their
audit for their Initial Field Standardization to become a State Standard.
After completing the training:
Participants will receive a certificate of
completion and 24 continuing education units (CEUs).

Step 1: Scan the QR code or click the link and fill out the pre-registration survey for the conference that you want to attend. Pre-registration does not guarantee a seat.
Step 2: Add FDBRetail@cdph.ca.gov to your trusted senders list to prevent your spam filter from blocking your confirmation email.
Step 3: Attend the training.
Notes:
- The training is free and CEUs will be provided.
- Candidates for CDPH standardization will be prioritized during pre-registration. This training has limited seating. Participants accepted into the training will receive a confirmation email after review of their pre-registration submission.
- You will be notified by email if the course is full.
- CDPH will provide additional opportunities to attend the Pre-Standardization Trainings routinely in the future.
- State Standard Candidates must also complete courses listed in Standard 2, Appendix B-1 of the
FDA Voluntary National Retail Food Regulatory Program Standards prior to beginning field work. Submit the course certificates of completion to FDBRetail@cdph.ca.gov.
